A nice warming soup with health benefits . good for reducing inflammation.
I tend not to use specific weights of ingredients, i like to add lib and use whatever i have to hand when making soup.
The key is to keep tasting as you add ingredients.
I suffer from Inflammatory Rheumatoid Arthritis so Ive added a few things that are good for reducing inflammation, i.e. turmeric, ginger, garlic, chili.
I have the benefit of an allotment garden (community garden) so i grew some of the ingredients myself. i.e. the carrots, onions and chili
Ingredients i used:
10 carrots
2 onions
3 or 4 cloves of garlic
about an inch of ginger
about a desert spoon of ground corainder (dhania)
Chili, (add to your own taste, i used 2 in this recipe)
some lemon juice
1.5 - 2 litres vegetable stock (chicken stock also works well if you are not a vegetarian)
A good hand full of Fresh coriander (cilantro)
method
chop the carrots and onions and sweat them down in a big pan for a few minutes with a bit of oil.
add the ground coriander and ground turmeric , i also added some fresh root turmeric but its not necessary if you don't have any to hand.
stir well
get your stock ready (i used stock cubes, avoid ones with added msg )
chop the ginger, garlic and chili and add to the pan.
be careful not to burn the garlic, i usually give it a quick stir then add the stock so you dont burn the garlic.
low simmer for about 15-20 minutes (or until carrots and onions are soft)
add a good handful of fresh coriander, stir and leave for a minute.
add some lemon juice to taste (goes so well with that chili kick)
then blend the soup with a hand blender or food processor, you can even use a potato masher if you dont have a blender.
or just leave it as it is if you want. its all up to you :-)
